Tips for making a delicious pasta

There are many ways to bake Easter treats. Some cook according to the recommendations of their grandmother, written on a postcard, others watch the life hacks of video bloggers, and not everyone manages to skillfully apply them. We have prepared universal tips to make your pasta perfect the first time:

  1. You need to knead the dough in a warm room without drafts, then it will rise much better.
  2. It is “live” yeast that is considered the most suitable for pasta because it rather helps the dough rise.
  3. Baking flour likes to “breathe”, so it should be sifted through a sieve 2-3 times. Then your muffin will be loose and tender.
  4. A small amount of rum or brandy gives an amazing spicy aroma to pasta.
  5. In addition to strong alcohol, spices can be added to the dough – cinnamon, vanilla, nutmeg, cardamom, or whatever you like best. Also, the zest of your favorite citrus will give a great taste.
  6. To prevent pastries from being pale, you can tint them with a pinch of turmeric.
  7. The dough for pasta requires a long kneading – at least 15 minutes, then it will be elastic, will not stick to the mold, and will rise well.
  8. Before laying out future Easter cakes in molds, you need to wait until the dough has increased by 3 times, and then knead again. When the blanks rise to the edges of the forms, then you can send them to the oven.
  9. If you put a container of water on the bottom shelf of the oven, then the pasta will not burn.
  10. Ready-made pastries should be placed on their side until completely cooled so that they do not sink under their weight.

Ingredients:

  • Milk – 0.5 l;
  • “Live” yeast – 60 g;
  • Flour (1 grade) – 1.2 kg;
  • Butter – 200 g;
  • Fresh chicken eggs – 5 pcs.;
  • Raisins – 300 g;
  • Sugar – 250 g (or to taste);
  • vanilla sugar – 1 tsp

Instructions:

  • Heat the milk, but do not boil, put the yeast in it and stir gently.
  • Add 0.5 kg of flour and mix thoroughly until smooth. Send the dough to a warm place (you can preheat the oven and, when you feel the heat rising from it, put the dough on top of the stove), wrapping it in a large towel. Wait until the dough has doubled in size.
  • Gently rub the separated yolks with sugar and vanilla, and beat the whites into foam, adding a pinch of salt.
  • Alternately, stirring each time, put the following components into the dough: prepared yolks, soft butter, and whites at the end. Add the remaining flour and start kneading for 15-20 minutes. Leave the finished dough to rest in a warm place until it rises.
  • Soak the raisins in lukewarm water for 10 minutes, pat dry with paper towels, sprinkle with flour, and add to the batter. Mix everything well and let it warm up.
  • Lubricate a separate form with butter or butter, put a round piece of paper on the bottom (if your molds are metal), fill each with a third of the dough, and set to rise again. Be sure to cover the blanks with a film or towel.
  • Start baking at 100 degrees for the first 10 minutes, then raise to 180 degrees and cook for another 30 minutes, checking with a wooden stick.

When the muffin has cooled, you can decorate and serve.
